Paula Deen lighter pumpkin roll cake takes 40 minutes and canned pumpkin, warm spices and toffee bits to make a soft, spiced sponge rolled around a light whipped filling. This make-ahead lighter pumpkin dessert fits Thanksgiving dinner, holiday table spreads and fall potluck nights, since it slices into 8 pieces.
Roll the cake up in the sugar-dusted towel while it is still warm, because that sets the spiral shape. Wait until it cools and the sponge cracks when you try to curl it.
Whipping the egg whites separately and folding them in gently is how Paula keeps this cake airy without any butter or oil. A fat free whipped topping filling with toffee bits and a splash of dark rum also keeps each slice light but still sweet.

kcalA soft, spiced pumpkin sponge wraps around a fluffy whipped filling dotted with crunchy toffee bits. Once chilled, it slices into neat spirals with a tender crumb and a lightly sweet finish.
Ingredients
3 tablespoons confectioner's sugar
1/2 cup all purpose flour
2 teaspoons ground cinnamon
1 1/4 teaspoons ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon salt
6 at room temperature egg whites
1/2 cup granulated sugar
3 egg yolks
1 teaspoon vanilla extract
2/3 cup not pumpkin pie mix pure canned pumpkin
1 1/2 cups thawed fat free frozen nondairy whipped topping
1/3 cup english toffee bits
1 tablespoon dark rum
Directions
- Prep the pan: Preheat the oven to 350°F, then line a 10 1/2 x 15 1/2 inch jelly-roll pan with wax paper and spray it with cooking spray. Dust a clean kitchen towel with the 3 tablespoons confectioner's sugar and set it aside.
- Mix the dry ingredients: Combine 1/2 cup all purpose flour, 2 teaspoons ground cinnamon, 1 1/4 teaspoons ground ginger, 1/2 teaspoon ground allspice and 1/4 teaspoon salt in a medium bowl. Set it aside while you beat the eggs.
- Beat the egg whites: Beat the 6 room temperature egg whites with an electric mixer on high speed until soft peaks form. Then add 1/4 cup of the granulated sugar, 1 tablespoon at a time, beating until the peaks turn stiff and glossy.
- Make the batter: In a medium bowl, beat the 3 egg yolks with the remaining 1/4 cup granulated sugar until pale yellow and thickened, about 4 minutes. Add 1 teaspoon vanilla extract and beat until a ribbon forms when you lift the beaters.
- Add the pumpkin: Reduce the mixer speed to low and beat in 2/3 cup pure canned pumpkin until blended. Then stir in the flour mixture with a rubber spatula until it just comes together.
- Fold in the whites: Gently fold the beaten egg whites into the yolk mixture. Stop as soon as no streaks of white remain, so the batter stays airy.
- Bake the cake: Pour the batter into the prepared pan and spread it evenly. Bake about 15 minutes, until the center springs back when lightly pressed.
- Roll the warm cake: Run a thin knife around the cake, invert it onto the sugar-dusted towel and carefully peel off the wax paper. While it is still warm, roll it up with the towel starting from a short side, then set it seam side down on a rack to cool completely.
- Make the filling: Combine 1 1/2 cups thawed fat free frozen nondairy whipped topping, 1/3 cup English toffee bits and 1 tablespoon dark rum in a medium bowl. Stir until evenly mixed.
- Fill and serve: Unroll the cooled cake, remove the towel and spread the filling over it with a narrow metal spatula. Then re-roll it, set it seam side down on a serving plate, dust with confectioners' sugar and cut into 8 slices.

FAQs
Why did my pumpkin roll crack when I rolled it?
Cracking usually means the cake cooled before it was rolled. Roll it up in the towel while it is still warm, and the sponge stays flexible enough to curl without splitting.
Can I use pumpkin pie mix instead of canned pumpkin?
No, use pure canned pumpkin. Pie mix already has sugar and spices in it, so it would throw off the sweetness and the spice balance in this lighter cake.
Can I make this pumpkin roll ahead of time?
Yes, you can bake and roll the cake a day ahead, then fill it when you are ready to serve. Keeping the filling off until then helps the sponge stay soft instead of soggy.
How should I store leftover pumpkin roll cake?
Wrap the filled cake tightly or keep it in an airtight container in the refrigerator. Since the filling is whipped topping, I would plan to eat it within a few days for the best texture.
What can I use instead of the dark rum?
Leave the rum out or swap in a little extra vanilla extract if you want to skip the alcohol. The filling will be a touch less warm in flavor, but it still pairs well with the spiced cake.
