Paula Deen apple stuffed pork loin is a tender rolled pork roast with apples, pecans, raisins and cornbread stuffing that comes together in 1 hour 35 minutes. Try this easy stuffed pork loin dinner for Sunday dinner or the holiday table, since it's a make-ahead friendly roast that feeds 8.
Pound the butterflied pork to an even 1/2-inch thickness before you add the stuffing, because that is what lets it roll up tight. Skip it and the thick spots cook slower, the roll bulges, and the stuffing squeezes out as it bakes.
Paula cooks the apples and raisins in apple cider first, so the stuffing stays moist and sweet while the pork roasts. She also pulls the roast at 155°F and lets it rest, which carries it to 160°F without drying out the loin.

kcalSweet apple and cider stuffing with crunchy pecans rolls up inside thin, tender pork, then roasts until the outside turns golden. Slicing it after a short rest shows a pretty spiral of juicy meat and stuffing.
Ingredients
1 peeled and chopped Granny smith apple
1 1/2 cups apple cider
1/4 cup raisins
2 tablespoons light brown sugar
1 teaspoon dry mustard
1/4 teaspoon ground ginger
1/3 cup coarsely chopped pecans
1 1/4 cups herb-seasoned cornbread stuffing mix
1 (3 lb) boneless pork loin roast
1 teaspoon plus 1/2 teaspoon salt
1 teaspoon divided onion powder
1 teaspoon ground, divided Black pepper
Directions
- Preheat and prep pan: Preheat the oven to 375°F. Lightly spray a shallow baking pan with nonstick cooking spray.
- Cook the stuffing: Combine 1 peeled and chopped Granny Smith apple, 1 1/2 cups apple cider, 1/4 cup raisins, 2 tablespoons light brown sugar, 1 teaspoon dry mustard and 1/4 teaspoon ground ginger in a small saucepan. Cook over medium-high heat for 5 minutes until the apples begin to soften. Then stir in 1/3 cup coarsely chopped pecans and 1 1/4 cups herb-seasoned cornbread stuffing mix and set it aside.
- Butterfly the pork: Lay the 3 lb boneless pork loin roast fat side down and slice it lengthwise down the center, cutting to but not through the other side. Open it flat, then slice each half lengthwise the same way and open flat again.
- Pound the pork: Place plastic wrap over the pork and pound it to 1/2-inch thickness with a meat mallet or rolling pin. This gives you one even sheet that rolls up easily.
- Season and stuff: Remove the plastic wrap and sprinkle the cut side with 1 teaspoon salt, 1/2 teaspoon onion powder and 1/2 teaspoon pepper. Spoon the apple-stuffing mixture lengthwise down the center, then fold one side of the pork over the stuffing and roll it up.
- Tie the roast: Tie the stuffed loin with kitchen twine several inches apart, or secure it with silicone wraps. Place it fat side up and seam side down in the prepared pan.
- Season the outside: Sprinkle the outside of the pork with the remaining 1/2 teaspoon salt, 1/2 teaspoon onion powder and 1/2 teaspoon pepper. Do this right before baking so the seasoning stays on the surface.
- Bake the roast: Bake for 1 hour 15 minutes, until a meat thermometer in the meaty part reads 155°F. Then take it out of the oven, because it keeps cooking as it sits.
- Rest and slice: Let the roast rest until the internal temperature reaches 160°F. Then remove the twine, slice and serve.

FAQs
Can I stuff the pork loin ahead of time?
Yes, you can cook the stuffing, roll and tie the pork, then keep it covered in the fridge until you're ready to bake. Let it sit out for a bit before it goes in the oven so it cooks evenly.
What can I use instead of cornbread stuffing mix?
Any herb-seasoned stuffing mix works, though the cornbread version gives a slightly sweeter, more tender filling. Just keep the same amount so the stuffing stays moist after it bakes.
How do I keep the apples from turning brown?
Chop the apple right before it goes into the saucepan, since it cooks in the cider and any browning won't show. If you chop early, a splash of lemon juice in water keeps the pieces fresh.
How do I store leftover stuffed pork loin?
Wrap the leftover slices or keep them in an airtight container in the fridge for 3 to 4 days. Reheat them gently in a low oven so the pork stays juicy.
What's the most common mistake with a stuffed pork loin?
Overcooking is the big one, because lean pork dries out fast. Pull the roast at 155°F and let it rest, and it finishes at 160°F while staying juicy.
