Paula Deen Fried Green Bean Bundles

Paula Deen Fried Green Bean Bundles are an easy Southern side dish made with fresh green beans, buttermilk and green onion strips, ready in 30 minutes. They're a crispy fried appetizer for game day, cookouts or potlucks, and a fun finger food for the holiday table.

Blanch the green onion strips before you tie anything, because raw ones snap when you knot them around the beans. Skip it and the bundles fall apart in the hot oil.

Paula seasons the flour with her House Seasoning instead of plain salt, so every bundle gets flavor in the crust itself. Rolling each bundle in buttermilk first gives that flour something to cling to, which keeps the coating crisp and golden.

Crunchy seasoned flour coats small bundles of fresh green beans, each tied together with a green onion strip. Fried in hot oil until golden, they come out crisp outside and tender inside.

Ingredients

  • 1 cup buttermilk

  • 2 tablespoons Paula Deen's House Seasoning

  • 2 cups Flour

  • 1 lb fresh green beans

  • 1 bunch cut into strips green onions

  • for frying Oil

Directions

  • Blanch the onions: Blanch the green onion strips in hot water for a few seconds so they turn soft and easy to work with. Then drain them and set them aside.
  • Tie the bundles: Gather about 5 green beans into a small bunch, then tie it in the center with a green onion strip. Repeat with the rest of the beans, which should make about 15 bundles.
  • Mix the coating: Whisk 2 tablespoons Paula Deen's House Seasoning into 2 cups flour in a shallow dish. Pour 1 cup buttermilk into a second dish nearby.
  • Coat the bundles: Dip each bundle in the buttermilk, then roll it in the seasoned flour until it's covered. Set the coated bundles on a plate while the oil heats.
  • Fry until golden: Heat oil to 350°F in a deep frying pan or Dutch oven. Fry the bundles in batches until golden brown, since crowding the pan drops the oil temperature.
  • Drain and serve: Lift the bundles out with a slotted spoon and drain them on paper towels. Serve them hot while the coating is still crisp.

FAQs

Can I make fried green bean bundles in an air fryer?

You can, though the coating won't be as crisp as deep-fried. Spray the coated bundles well with oil and air fry them at 400°F, turning once, until golden. Paula's recipe is written for hot oil, so this is my own shortcut.

What can I use if I don't have House Seasoning?

Mix your own with salt, black pepper and garlic powder, which are the basics of her blend. Taste the flour mixture before you start, because the crust is where most of the flavor comes from.

Can I tie the bundles ahead of time?

Yes, you can tie them a few hours ahead and keep them covered in the fridge. Wait to dip and fry until just before serving, since the flour coating turns gummy if it sits.

Why are my green bean bundles falling apart in the oil?

Usually the green onion strip wasn't blanched, so it snapped or slipped loose. Tie each knot snug in the center of the bundle, and lower them into the oil gently so they hold together.

How do I keep them crisp until I serve them?

Drain them on paper towels, then hold them on a rack in a 200°F oven for up to 20 minutes. Leftovers go soft in the fridge, so I'd fry only what you plan to eat.
