Paula Deen peach tart is a buttery lard and butter crust piled with fresh freestone peaches, cinnamon sugar and a glossy jam glaze, ready in about 2 hours. It's an easy summer peach dessert for a potluck, cookout or church supper, and it's make-ahead friendly since the crust can chill the day before.
Blind bake the crust with buttered foil and pie weights before the peaches go in, because that's what keeps the bottom from turning soggy. Skip it and the juicy peaches soak straight into raw dough.
The crust gets both butter for flavor and lard or shortening for flakiness, and she cuts it in just until it looks like coarse meal. Pressing the dough into the pan without stretching it also keeps the sides from shrinking away while it bakes.

kcalThick peach wedges fan out in concentric circles over a crisp, flaky crust, then bake until tender with a hint of cinnamon and fresh nutmeg. A brushed-on jam glaze gives the top a shiny finish.
Ingredients
10 ounces (about 2 cups ) all purpose flour
4 tablespoons sugar
1/2 teaspoon salt
4 ounces (1/2 cup or 1 stick) cut into small bits unsalted cold butter
2 tablespoons chilled lard or vegetable shortening
6 to 8 ripe freestone peaches
in a grater whole nutmeg
3 tablespoons peach or apricot jam forced through a wire mesh strainer
Vanilla, caramel, or ginger optional ice cream
Directions
- Make the dough: Whisk 10 ounces flour, 2 tablespoons sugar and 1/2 teaspoon salt together, then cut in 4 ounces cold butter and 2 tablespoons chilled lard with a pastry blender until it looks like coarse meal. Work in about 1/3 cup ice water, adding more by spoonfuls until the dough just holds together. Then wrap it and chill 20 minutes.
- Try the food processor: You can also make the pastry in a food processor with the steel blade chilled for 5 minutes first. Pulse the flour, sugar and salt, process in the fat, then pulse in the water a little at a time, wrap and chill as before.
- Line the tart pan: Set a rack in the center of the oven and preheat to 375°F. Press the dough into a 12-inch round tart pan without stretching it, prick it well with a fork, and chill 20 to 30 minutes.
- Blind bake the crust: Line the crust with buttered foil, buttered side down, fill it with pie weights or dried beans and bake 20 minutes. Then lift out the foil and weights and bake 8 to 10 minutes more, until it just starts to color.
- Season the bottom: Sprinkle the warm crust bottom with cinnamon sugar. Let it cool while you get the peaches ready.
- Slice and arrange peaches: Peel 6 to 8 ripe freestone peaches, halve and pit them, and cut them into thick wedges. Arrange them in a single layer, slightly overlapping, in concentric circles on the crust, then sprinkle well with cinnamon sugar and a generous grating of whole nutmeg.
- Bake the tart: Bake about 40 minutes, until the peaches are tender and the crust is golden brown. While it bakes, melt 3 tablespoons strained peach or apricot jam with the remaining sugar over medium-low heat and simmer 3 to 5 minutes.
- Glaze and serve: Let the tart cool slightly, then brush it generously with the warm glaze. Serve warm or at room temperature, with vanilla, caramel or ginger ice cream if you like.

FAQs
Can I use frozen or canned peaches for this tart?
Fresh freestone peaches work best, since they slice cleanly and hold their shape in the oven. If you must use frozen, thaw and pat them very dry first, because extra liquid will make the crust soggy.
How do I store leftover peach tart?
Cover it loosely and keep it at room temperature for the first day. After that, refrigerate it for up to 3 days, though the crust is crispest the day it's baked.
Can I make the dough ahead of time?
Yes, the dough can be made and wrapped in plastic, then chilled until you're ready to roll. Chilling it also helps the crust hold its shape when it bakes.
What if I don't have a tart pan?
A 9x13 baking dish or a large pie plate can stand in, though the crust edge won't be as neat. Adjust the dough to fit and keep the same blind baking step.
What's the most common mistake with this tart?
Overworking or stretching the dough is the big one, because it shrinks back in the oven and gets tough. Press it in gently and chill it well before baking.
