Paula Deen holiday spice cake is an easy three-layer cake made with cake flour, warm spices and buttermilk, topped with fluffy butter cream and ready in 1 hour. Save this easy holiday dessert for the holiday table, church supper or potluck, because it feeds a crowd of 15 and every layer comes out tender.
Beat the butter, sugar and salt until light and fluffy before any egg goes in. Hurry that and the layers bake up dense instead of tender.
Paula slices the domed tops off each layer with a serrated knife, so the cake stacks flat and the butter cream stays even. She also alternates the dry ingredients and buttermilk, which keeps the batter smooth without overmixing.

kcalThree tender buttermilk layers carry nutmeg, cinnamon, ginger and cloves, with a thick, fluffy butter cream spread between them. A dusting of cocoa and chopped nuts finishes the top.
Ingredients
3 cups cake flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon Ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
2 sticks softened, plus 3/4 cup softened for frosting Butter
2 cups sugar
1/2 teaspoon salt
4 eggs
1 1/4 cups buttermilk
1/4 cup shortening
6 cups confectioner's sugar
1 1/2 teaspoons vanilla extract
1/2 cup heavy cream
for topping cocoa powder
finely chopped for topping nuts
Directions
- Prep the pans: Preheat the oven to 350°F. Butter and flour 3 (8-inch) round cake pans.
- Whisk the dry ingredients: Whisk 3 cups cake flour, 2 teaspoons baking powder, 1 teaspoon baking soda and 1 teaspoon each nutmeg, cinnamon and ginger with 1/2 teaspoon cloves. Set the bowl aside while you make the batter.
- Cream the butter: Beat 2 sticks softened butter, 2 cups sugar and 1/2 teaspoon salt with an electric mixer until light and fluffy. Then beat in the 4 eggs one at a time, mixing well after each.
- Add flour and buttermilk: Beat in the dry ingredients and 1 1/4 cups buttermilk alternately, beginning and ending with the dry. Mix until the batter is smooth.
- Bake the layers: Divide the batter among the 3 prepared pans and bake about 25 minutes, until a toothpick in the center comes out clean. Cool in the pans for 10 minutes, then turn them out to cool completely.
- Level the layers: If the layers domed during baking, slice off the tops with a long serrated knife. That leaves them flat and even for stacking.
- Make the butter cream: Beat 3/4 cup softened butter and 1/4 cup shortening until creamy with an electric mixer. Add half of the 6 cups confectioner's sugar and beat about 5 minutes until light and fluffy.
- Finish the frosting: Stir 1 1/2 teaspoons vanilla extract into 1/2 cup heavy cream. Then beat in the remaining sugar alternately with the cream mixture until the frosting is very light and fluffy.
- Stack and garnish: Set the first layer cut side down on a cake pedestal and spread about 3/4 cup butter cream almost to the edges with an offset spatula. Repeat with the other 2 layers, then garnish the top with finely chopped nuts and cocoa powder.

FAQs
Can I use all-purpose flour instead of cake flour?
You can, but the layers come out a little denser. For a closer match, take 2 tablespoons out of each cup of all-purpose flour and replace them with cornstarch.
How long does spice cake keep?
Cover it and keep it at room temperature for a day or two. After that, the fridge is safer because of the butter cream, so let slices sit out a bit before serving.
Can I make the layers ahead of time?
Yes, bake and cool the layers, then wrap them tightly in plastic wrap and keep them overnight. Frost them the next day so the butter cream stays fresh.
What if I don't have three 8-inch pans?
Bake in two pans at a time and reuse them for the last layer. Keep the remaining batter at room temperature while you wait.
Why did my butter cream turn out grainy?
Butter that is too cold or sugar added too fast is usually the cause. Use softened butter and add the sugar and cream gradually, beating until it turns light and fluffy.
