Paula Deen sheet pan shrimp boil takes about 1 hour 10 minutes and jumbo shrimp, andouille sausage and corn to make a smoky, buttery seafood dinner that serves 4. It's an easy sheet pan seafood dinner for a weeknight dinner, a cookout or game day, and it's served with a garlic lemon butter.
Parboil the Yukon gold potatoes for 10 minutes before they go on the pan, because raw potatoes won't soften in the time the shrimp need. Skip it and you get hard potatoes next to nicely pink shrimp.
Paula uses a two-rack oven, with the vegetables in the center and the shrimp finishing in the top third, so each ingredient cooks for the time it needs. Roasting the garlic and lemons on the same pan also gives you the base for a dipping butter that boils in a pot can't match.

kcalCrisp-edged potatoes, browned sausage and corn, and plump roasted shrimp share one pan, with a garlic lemon butter on the side. The oven does the work, so there's no big pot of boiling water to manage.
Ingredients
1 pound small Yukon gold potatoes
2 tablespoons Kosher salt
1 sweet potato, cut into ½-inch pieces
1 red onion, cut into 1-inch wedges
2 heads garlic, tops cut off
2 lemons, halved
1 (12-ounce) package andouille sausage, sliced crosswise diagonally
2 ears corn, shucked and cut into 2-inch pieces
1 (8-ounce) container fresh baby portobello mushrooms, halved
1 pound peeled and deveined jumbo fresh shrimp (tails left on)
3 tablespoons Creole seasoning *, divided
1 tablespoon chopped fresh chives
½ cup unsalted butter, melted
Rémoulade Sauce, for serving
Directions
- Preheat and line: Position oven racks in the center and top third of the oven, then preheat to 425°F. Line a rimmed baking sheet with foil so cleanup stays easy.
- Parboil the potatoes: Combine 1 pound small Yukon gold potatoes, 2 tablespoons Kosher salt and enough cold water to cover in a medium stockpot. Bring to a boil over medium-high heat and cook about 10 minutes until just fork-tender, then drain.
- Load the pan: Cut the gold potatoes in half and place them on the prepared pan. Then add 1 sweet potato cut into ½-inch pieces and 1 red onion cut into 1-inch wedges. Place 2 heads garlic with the tops cut off (cut side down) and 2 halved lemons (cut side up) alongside.
- Roast the vegetables: Bake on the center rack for about 15 minutes, until the potatoes are lightly golden and starting to crisp. Check them at the 12-minute mark so nothing gets too dark.
- Add sausage, corn and mushrooms: Add the sliced andouille sausage (one 12-ounce package), 2 ears corn cut into 2-inch pieces and 1 container halved baby portobello mushrooms. Bake 15 to 20 minutes more, until the sausage is crisp and the corn and mushrooms have started to brown.
- Add the shrimp: Add 1 pound peeled and deveined jumbo shrimp with the tails left on, then sprinkle 2 teaspoons of the Creole seasoning over everything. Bake in the top third of the oven for 7 to 10 minutes, until the shrimp are pink, firm and cooked through.
- Finish with herbs: Remove the garlic and lemons from the pan. Top the shrimp mixture with the parsley and 1 tablespoon chopped fresh chives.
- Make the garlic lemon butter: Squeeze the roasted garlic and lemons into a small bowl, then stir in ½ cup melted unsalted butter and the remaining 1 teaspoon Creole seasoning. Serve right away with the shrimp boil and the rémoulade sauce.

FAQs
Can I use frozen shrimp for this sheet pan shrimp boil?
Yes, but thaw them completely in the fridge and pat them very dry first. Extra water on the shrimp steams the pan instead of letting everything roast.
What can I use instead of andouille sausage?
Smoked sausage or kielbasa works fine, though you'll lose a bit of the Cajun heat. Slice it the same way so it still crisps in the oven.
Can I prep the shrimp boil ahead of time?
You can parboil the potatoes and cut the vegetables a day ahead and keep them in the fridge. Bake and add the shrimp right before serving, since shrimp turn rubbery if they sit.
How do I store leftovers?
Keep leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in the oven, because the microwave tends to toughen the shrimp.
What's the biggest mistake with a sheet pan shrimp boil?
Adding the shrimp too early is the most common one, since they only need 7 to 10 minutes. Put them in last and pull the pan the moment they turn pink and firm.
